Homemade chicken and dumplings for this cold day!
••1.5 lbs chicken tenderloins
••4 cups chicken stock
••1 can cream of chicken soup
••1 tsp salt
••1 1\2 tsp pepper
••1 cup half and half
••1 tsp rosemary
••1\2 tsp thyme
••8 oz each carrots and corn, drained
••1 1\2 cups baking mix
••1\2 cup milk
Boil or steam chicken until done and shred.
Combine stock, soup, half and half, salt, pepper, rosemary, and thyme, bring to a boil, add chicken and veggies, reduce heat to medium and cook for 10 min.
Meanwhile, combine the baking mix and milk and drop by spoonful on top of chicken mixture. Cook uncovered for 10 min, then cook and cook 10 to 15 more min
